Unskilled workers with very little training can use ST591 and successfully remove all vertebrae and neck bones at high speed and accuracy. The flat side of the head needs only to be placed on the imaginary line where the bones are, and the handle needs to be moved from the head to the tail without applying pressure. The speed can be adjusted to fine tune the quality of the work if needed, and the water can be turned off if the product is used for sashimi sushi. The machine can be used in small, medium and large production facilities to cull the entire fillet or remove only the neck bone after an automatic line.
